This super quick meal is surprisingly packed with nutritional heft, thanks to the addition of the sweet
potatoes. Let everyone build their own jack-o-lantern face with olives and slices of bell pepper and use a
green bell pepper slice as a pumpkin stem to really bring these jack-o-lanterns to life!
2medium sweet potatoespeeled and grated (about 4 cups)
1tsp. dried oreganoor 1 Tbsp. minced fresh
1tsp. chili powder
2tsp. ground cumin
1/4tsp. saltor to taste
8whole wheat pitas use wheat/gluten-free, if needed
1 1/2cupsshredded Monterey jack or cheddar cheeseorange colored cheese will make the pizza look more pumpkin-y!
1/4cupolivescut into slices (optional)
1/2red or green bell peppercut into slices (optional)
Instructions
Preheat the oven to 375 degrees.
In a large nonstick skillet over medium heat, heat the oil.
Sauté the onions and garlic until the onions are soft, about 5 minutes.
Stir in the grated potatoes, oregano, chili powder, cumin, and salt. Cook, covered, for about 10 minutes, stirring frequently.
To assemble the pizzas, lay the pitas out on a large baking sheet (use two baking sheets, if necessary). Spread ½ cup of the sweet potato filling on each of the pitas and top it with about 1/4 cup cheese. Use olives and bell pepper slices to create jack-o-lantern faces, if desired.
Bake the pizzas for 8 - 10 minutes, until the cheese has melted.

Do Ahead or Delegate: Dice the onion, peel the garlic, peel and grate the sweet potatoes, combine the spices, grate and refrigerate the cheese, if necessary.Scramble Flavor Booster: Use chipotle chili powder or hot Mexican chili powder instead of traditional chili powder.Tip: When grating cheese, try spraying the grater with a little nonstick spray first.
