Creamy Wagon Wheel Noodles with Cherry Tomatoes
This attractive and appetizing dish is a great way to enjoy those cute little wagon wheel noodles (rotelle). Scramble recipe tester Kimberly Wilcox reported that all three of her children, ages 11 to 16, enjoyed it.
Ingredients
- 16 oz. wagon wheel (rotelle) noodles use wheat/gluten-free, if needed
- 2 Tbsp. extra virgin olive oil
- 3 cloves garlic minced, about 1 1/2 tsp.
- 2 pints grape or cherry tomatoes halved
- 1/2 cup grated Parmesan cheese
- 3 - 4 Tbsp. herbed or plain goat cheese about 1/2 of a 5.5 oz. package
- 1/4 cup fresh basil chopped, or 1 tsp. dried
- 1/4 tsp. salt or to taste
- 1/8 tsp. black pepper or to taste
Instructions
- Cook the noodles according to the package directions until they are al dente, and drain them.
- While the noodles are cooking, heat the oil in a large heavy skillet over medium heat.
- Add the garlic and tomatoes and cook, stirring occasionally, until the tomatoes are slightly softened, 5 - 7 minutes.
- Reduce the heat and stir in the drained pasta, Parmesan cheese, goat cheese, and basil.
- Season it with salt and pepper, and serve it immediately.
Notes
Do Ahead or Delegate: Cook the pasta and store tossed with a little oil to prevent sticking, peel the garlic, halve the tomatoes, grate the Parmesan cheese if necessary and refrigerate.
Scramble Flavor Booster: Use herbed goat cheese and freshly grated aged Parmesan cheese.
Tip: Garlic, scallions and leeks contain allicin, a phytochemical that may help to lower cholesterol and blood pressure. So not only are you benefitting your taste buds with these ingredients, but your body as well!
