Waldorf Salad
Just like your grandma used to make (but maybe even better).
Ingredients
- 2 Granny Smith apples or use other tart apples, diced
- 4 stalks celery sliced
- 1/4 - 1/2 cup walnuts coarsely chopped
- 2 tsp. reduced-fat mayonnaise or use any variety
- 1 Tbsp. pineapple juice
Instructions
- Combine the apples, celery, walnuts, mayonnaise, and pineapple juice. (You can use the juice from a can of diced pineapple, and serve the pineapple separately.) Refrigerate it until ready to serve.
Notes
Scramble Flavor Booster: It's also great with about 1/4 cup of blue cheese or Gorgonzola cheese stirred in.
