Carrot, Cabbage, and Apple Slaw with Soy-Tahini-Lime Dressing
This is a really different take on coleslaw. Light, bursting with flavor, and so crunchy and delicious.
Ingredients
- 1/4 head red cabbage thinly sliced about 3 cups
- 2 - 3 carrots shredded (use large holes on grater) about 2 cups
- 1 Granny Smith apple shredded (use large holes on grater) about 1 cup
- 1/4 cup reduced-sodium soy sauce (or use any variety) (use wheat/gluten-free, if needed)
- 1 Tbsp. toasted sesame seeds (store-bought or homemade)
- 1/2 lime juice only, about 2 Tbsp.
- 2 Tbsp. extra virgin olive oil
- 1 Tbsp. tahini (sesame paste) (use wheat/gluten-free, if needed), or use almond or sunflower butter
- 1 Tbsp. rice wine or mirin,
- 1/2 tsp. ground ginger or use 1 – 2 tsp. fresh grated ginger
Instructions
- In a medium bowl, combine the cabbage, carrots and apple.
- In a large measuring cup, whisk together the remaining ingredients.
- Pour the dressing over the ingredients in the bowl, and let it sit for at least 10 minutes if time allows, and up to 2 days.
