Coconut French Toast
French toast is a family favorite, but standing at the stove for 30 – 40 minutes flipping slices of bread isn’t the most fun, so I decided to use the broiler instead. The outcome was golden and crisp on the outside and soft on the inside, just how French toast should be. It makes enough for several breakfasts and was ready in 15 minutes. I call that a win! To make it even more coconutty, sprinkle a small amount of unsweetened shredded coconut on top which will add a fun crunch and texture. Serve with your favorite toppings such as maple syrup, honey, or jam
Ingredients
- 1 cup coconut milk or use any milk of your choice
- 4 eggs
- 1/2 tsp. ground cinnamon
- 1/8 tsp. salt
- 1 loaf whole wheat sourdough, or regular French bread (use wheat/gluten-free, if needed), cut into ½-inch slices
- 2 Tbsp. unsweetened shredded coconut optional
Instructions
- Set an oven rack 4 inches below the heat source and, preheat your broiler. Grease a large baking sheet with butter.
- In a medium bowl, whisk together the coconut milk, eggs, cinnamon, and salt.
- Dip each slice of bread into the mixture, letting any excess drip off. Place them side-by-side on the baking sheet.
- Put the baking sheet under the broiler for 4 minutes or until the slices are all golden brown.
- Flip them and put back under the broiler for another 4 minutes, or until the slices are golden on the other side.
- Sprinkle with the coconut, if using and serve immediately with your toppings of choice, refrigerate for up to 3 days or freeze for up to 3 months.
Notes
Do Ahead or Delegate: Slice the bread, make and refrigerate the milk and egg mixture, or fully prepare and refrigerate or freeze the dish.
Scramble Flavor Booster: Add more cinnamon or add nutmeg.
Tip: Did you know freezer French toast is simple and reheating is as well? To freeze, let it cool completely and then place all the slices together in a freezer bag. When you are ready to reheat some, microwave the slices for 30 – 45 seconds, depending on your microwave, and then crisp back up in the toaster oven or oven.
