Steak with Soy-Lime Marinade

This marinade incorporates some of my favorite flavors and it also works well for chicken or fish fillets.

Ingredients
  

  • 2 - 2 1/2 lbs. rib eye, New York strip, or other steaks, (about 1-inch thick)
  • 1/4 cup reduced-sodium soy sauce (or use any variety) (use wheat/gluten-free, if needed)
  • 1 lime juice only, 2 Tbsp.
  • 2 cloves garlic minced, about 1 tsp.
  • 1 tsp. fresh ginger peeled and minced, or use 1/4 tsp. ground ginger
  • 1 Tbsp. honey or brown sugar

Instructions
 

  • Lay the steaks flat in a large dish with sides just big enough to hold them in a single layer. In a measuring cup, mix together the remaining ingredients and pour them over the steaks.
  • Flip the steaks once or twice to coat them in the marinade. Let the steaks marinate for 15 minutes (or if time allows, refrigerate them in the marinade for up to 24 hours)
  • When you are ready to cook, heat a large heavy skillet (or preheat the grill) over medium-high heat. Add the steaks and remaining marinade to the skillet (or put the steaks on the grill).
  • Cook the steaks 4 - 5 minutes per side until they are browned and cooked through to the desired doneness. Slice the steaks into strips to serve. Serve immediately or refrigerate for up to 3 days.

Notes

Do Ahead or Delegate: Juice the lime, peel the garlic, peel and mince the ginger, make the marinade and marinate the steak and refrigerate, or fully prepare and refrigerate the dish.
Scramble Flavor Booster: Double the garlic and ginger and serve the steak with Asian chili-garlic sauce.
Tip: Look for steaks that have some marbling, because it is the thin threads of fat running through the meat that give it the wonderful rich flavor.
