Ingredients
  

  • 16 oz. farfalle pasta use wheat/gluten-free, if needed
  • 1 Tbsp. extra virgin olive oil
  • 1 yellow onion chopped
  • 10 fresh sage leaves chopped
  • 12 oz. sweet Italian chicken or vegetarian sausage, use wheat/gluten-free, if needed, thinly sliced
  • 1/2 cup red wine don’t use cooking wine, or use 1/4 chicken broth and 1 Tbsp. red wine vinegar
  • 28 oz. diced tomatoes with their liquid, or use 2 lbs. fresh diced tomatoes
  • 1/4 tsp. salt or to taste
  • 1/8 tsp. black pepper or to taste
  • 1/2 cup grated Parmesan cheese or to taste, for serving

Instructions
 

  • Cook the pasta according to the package directions and drain it. Meanwhile, heat the oil in a large skillet over medium heat. Add the onions, sage, and sausage and cook until the onions are softened and the sage and sausage are browned, 8 – 10 minutes.
  • Add the wine and stir, loosening up any browned bits from the bottom of the pan.
  • Add the tomatoes and simmer for 15 - 20 minutes, or longer if time allows, stirring occasionally.
  • Add the pasta to the skillet and combine. Season it with salt and pepper, and serve it immediately, topped with the cheese, or refrigerate it for up to 2 days.

Slow Cooker Directions:

  • Combine all ingredients except the pasta and Parmesan cheese in the slow cooker, and cook on low for 8 - 10 hours or on high for 4 - 5 hours. Serve over cooked pasta and topped with cheese. (Slow cooker cooking times may vary—Get to know your slow cooker and, if necessary, adjust cooking times accordingly.)

Notes

Do Ahead or Delegate: Cook the pasta and store tossed with a little oil to prevent sticking, chop the onion and sage, slice the sausage and refrigerate, dice the tomatoes if using fresh, grate the cheese if necessary and refrigerate.
Scramble Flavor Booster: Add a pinch of crushed red pepper flakes to the skillet with the sausage mixture.
Tip: Cooking pasta in well salted water gives the noodles more flavor and reduces the amount of salt you need to use in the recipe - I recommend it!
