I'm a single mom with a toddler, and have definitely struggled with what to make for dinner -- while the scramble planning helps, I agree with the previous commenter that it's a little hard to motivate cooking for just one. But I think that's a broader issue re: the difficulty many people have in cooking real dinners when it's just you -- or, now, in my case, me and my son, who usually takes 2 bites of food and wants to get down and run around. Not sure what would help get me past that issue, but it's something I've been thinking about. And will keep working on it...

Hi Aviva - I also have been feeling like a single parent lately. My husband got a new job and he is working all of the time. I have two daughters, 7 and 4, who for their age are pretty adventurous eaters - thanks to the Scramble, but many times will only try something the requisite 3 times and tell me they just don't like it. So I find that when I know my husband won't be home, I tend to not even make the Scramble meals. Even though they are easy to make, it is just that much more work when a salad, pasta and maybe a little chicken is their favorite and is really easy to put on the table. Although I will say that I do find myself wondering what we will have for dinner more now. When before with the Scramble every night I never had to think about it. I have been finding that one week's worth of Scramble recipes tends to last me more like 2 weeks of time. Definitely cutting down on the grocery bills at home. My husband and I love the creative cuisine you offer, but the kids just aren't that into most nights. Don't change a thing, just thought I would weigh in.

I just received this touching note in response to this week's column.

Aviva,
Just joined The Scramble this week, so am receiving my first note from you today. What a joy to find the first newsletter speaking to me! My husband passed away nine years ago and I am raising 12 and 14 year old boys. Thanks for making me feel welcome!

I look forward to your menus and grocery lists to make life a little easier, healthier and fun!

Sincerely,
Shannon H.
