Great use for leftover coconut milk

Do you still have a cup of coconut milk leftover from recent Scramble recipes?  If you want to put it to good use, here’s a suggestion from Scramble subscriber, Sophie H. of Yarmouth, Maine:

Hi Aviva I just wanted to send you a potential “tip”. I made the Brazilian Halibut last night (totally delicious, thank you) and woke this morning to see the left over cup of coconut milk in my fridge while I am in cleanout mode. I ended up making blueberry muffins with coconut milk this morning and they were a huge hit. Just an idea Waste not want not! Thanks, Sophie

 

Here’s the recipe that Sophie used, from the King Arthur Flour website:

here it is:

1 C rolled oats
1 1/4 C flour
1/2 C sugar
1/2 tsp salt
1 T baking powder
1 1/2 C berries (I warmed up frozen blueberries that we always have on hand)

1 C coconut milk
1/4 C vegetable oil
2 eggs

Mix the dry and the berries, and then the wet separately, then combine
only stir 20 times when mixing the wet with the dry to let it be lumpy

Fill 12 muffin cups

Preheat oven to 500 degrees (this makes the crown of the muffin higher they say)
put the muffins in then lower oven temp to 400 degrees immediately

Bake for 15-20 min

New Side Dish Search is Now Live

Our new (and loooong awaited) side dish search feature is now live on the website (for members only, of course).  Scramblers now have the ability to look up that side dish they wanted to make again, without having to find the original recipe it was attached to. 

You can’t yet swap side dishes for a recipe or add them to the grocery list, but that’s on our to-do list.  If you have a chance to try the new feature, please let me know what you think!

California Salad with Avocado, Pine Nuts, and Pomegranate Seeds

My mom invented this salad a couple of weeks ago and I think it’s addictive–let me know whether you think your families would like it–is it Scramble-worthy? 

1 avocado, sliced

2 Tbsp. pomegranate seeds

2 Tbsp. pine nuts

1 Tbsp. Asian Ginger Dressing

Lay the sliced avocados on a plate and sprinkle the pomegranate seeds and pine nuts over them.  Drizzle the dressing on top.

Choice Ramen is no More–Already

Just when I’d discovered a great new, healthier product (Choice Ramen, by Nissin), I’m disappointed to learn it’s been discontinued!  Here’s what I learned from Monica Petrus at Nissin Foods: 

“Unfortunatley, Choice Ramen was discontinued.  If you do find it – stock up!”

No response yet from Monica to my query as to why it was discontinued–I can’t imagine why they’d want to pull a lower salt, lower fat form of ramen, that still tasted good, off the supermarket shelves.  Can you?
